Preserving jars
The classic preserving jar is the Weck jar, which is closed tightly with a rubber band and metal clips. A variation are preserving jars with an integrated swing stopper.
However, so-called twist-off jars, i.e. jars with a screw cap, have become particularly popular for jams. These have the great advantage that they can be easily resealed after opening.
Preserving jars are extremely heat resistant. Several hundred degrees cannot harm them. What they do not tolerate so well, however, are temperature shocks. If there is a temperature difference between the jar and its contents of 50 degrees Celsius or more, they can quickly burst.
Tip: If you place a damp tea towel under the glass when filling it, you reduce the risk of it bursting.
It is important that the inside of the jars is germ-free so that the contents do not spoil. To sterilize, either bake the opened preserving jars for ten minutes in the oven at 180 degrees Celsius or boil them for ten minutes in a pot of hot water.
Before the jars can be filled, they must cool down after sterilization.
There is no standard shelf life date. If the temperature was high enough when preserving and no germs actually got into the jar, preserves can be kept for several years. It is important that the food is stored in a dark and cool place. You can recognise spoiled preserves by the formation of mould.
After filling, you should turn preserving jars with screw caps upside down for a while. The heat ensures that the lid is disinfected again. Ten minutes is enough. This little trick saves you from having to boil the contents again after filling.
