They come from Italy and are somewhat kidney-shaped with squarish ends. They have a fluffy texture and a somewhat nutty, mild flavour when cooked. They can be used in soups like Pasta E Fagioli or minestrone, salads, pureed in a hummus-like dip, or slow-cooked and served as a side dish once they've been soaked. ✔ HIGH-QUALITY INGREDIENTS: Start by pre-soaking the beans overnight. Soak 1 cup of beans in 4 cups of water for 12 hours in a large bowl or pot. This procedure is necessary in order to make the beans' nutrients accessible and digestible.
