The Champagne Devaux house is one of the region's historic producers with a tradition dating back to the 19th century when it was founded by brothers Jules and Auguste Devaux. Located in the Cote-de-Bar, the estate, under the control of Union Auboise since 1987, extends over approximately 140 hectares of vineyards, from which it produces a wide range of high-prestige champagnes. Champagne Cuvée D is the house's flagship wine, produced with a blend of Pinot Noir and Chardonnay from the Côte de Bar and the Côtes des Blancs, Montgueux and Côtes des Bar respectively. After fermentation (partly in stainless steel and partly in barrels), and a partial malolactic fermentation, reserve wine is added to the base wine for approximately 35%.
