We achieve the rich, sticky, liquorice-and-vanilla character of proper dark rum the slow way: twice pot-distilled, molasses-based, aged with heavily charred American oak chips. No added sugar. A BLEND OF TWO DISTILLATIONS, FERMENTED WITH WILD TRINITY YEAST - Dark Drop is a deliberate blend of two rich, molasses-based distillations, one double pot-distilled, and one distilled in our double retort- each fermented separately using DropWorks' proprietary Wild Trinity Yeast (three strains living symbiotically together, exclusive to the distillery). The two distillations are then married by hand for a soft, layered, full-bodied dark rum that tastes far older and more complex than its production timeline suggests. AGED WITH HEAVILY CHARRED AMERICAN OAK CHIPS - Where Barrel Drop (our 16-month barrel-aged sibling) lives in full-size oak casks, Dark Drop takes a different route: a week-long, intense aging on heavily charred American oak chips. The deep char layer pulls vanilla, caramel and warm wood spice straight into the rum, while the molasses base contributes dark, sticky-fruit sweetness. Same uncompromising approach.
