Pressing is pneumatic, without settling. Fermentation is 100% indigenous yeast, and ageing is on lees in underground concrete vats. For this 100% Melon de Bourgogne, with its white gold colour, the attack is clean and straightforward, while the palate is crystalline and marked by great purity. The texture is slender, rich and complex, combining mineral and citrus notes. A wine with great length and a persistent iodine flavour, and definite ageing potential, which will delight lovers of seafood.
