Hacienda de Chihuahua was granted its own appellation in 2004 and is the top of not just the Sotol market (of whom there are 5 producers) but also the Mexican Spirit market. Unlike tequila, the Sotol plant grows wild over a considerable expanse of land. At 10-12 years the leaves of the agavacea are longer, thinner and somehow more elegant than the thicker leaves of the blue agave and the pina has reached 10kg and is ready to be harvested.
