However, what's different is that this isn't a sweetened gin at all. It's made with a recipe taken from a 1840s distillers notebook, and features a hefty helping of botanicals, which has resulted in the Old Tom flavour profile without the Old Tom sweetener. Impressive, an excellent in a Martinez or Tom Collins.
