On the whole, whenever you open a jar, all the nutrients and trace elements remain from the day that the product was made. Stage 1: prepare your Le Parfait jars, wash them and let them dry in the air (ensure that you have scrupulously clean hands).Check that your jars are in good condition. Ensure that none of the surfaces have any chips, scratches or residue stuck to them. Clean the jars, terrines and lids with warm water to which disinfectant has been added, or add a soup spoon of bleach for a litre of water. Avoid banging the jars together. Do not use a metallic or abrasive sponge to wash your jars and terrines. After washing, rinse the jars and terrines thoroughly with hot water, then allow them to dry in the air - do not wipe them. Step 2: choose healthy and fresh ingredients. Choose your ingredients carefully. The ingredients that you have decided to preserve must be perfectly fresh, clean and suitable for preserving. Never use frozen or defrosted products or ingredients. When preparing the fruit or vegetables, ensure that you do not allow peeled food to come into contact with waste, such as peelings and leaves. Stage 3: cook your ingredients. Prepare the ingredients that you wish to preserve. If necessary blanch the vegetables. With poultry, the gizzards must be taken out, and the insides must be washed carefully with running water. Keep to the recipe. Each stage of the preparation must be carried out one after the other without a pause. Stage 4: fill your Le Parfait jars or terrines. Whenever the product and its preparation method allows, fill the jars with the ingredients as hot as possible, even boiling. Fill your jars up to the maximum level marked on the jar, or up to 2 cm from the rim. Then wait a few minutes to ensure that your preparation has settled correctly, so that any air pockets can escape. Top up if necessary. Stage 5: close your Le Parfait jars or terrines. Before sealing each jar or terrine, use a new Le Parfait Super rubber washer, making sure it is the right one for the jar or terrine. Le Parfait's accessories are specially designed to fit your jars or terrines. Warm the washers before placing them on the lids. Ensure that the rim of your jar or terrine is completely clean before closing it. Any particles trapped between the washer and the jar could cause the preservation of your recipe to fail. Finally, close the jar and start thermal treatment immediately if the recipe so requires. Preservation methods differ depending on the recipe. Some may require the use of vinegar, oil or salt as preservatives - thermal treatment may not be necessary. In all cases, follow the recipe instructions to the letter. Stage 6: thermal treatment. Put a clean cloth in the bottom of your pressure cooker to prevent the glass and the metal coming into direct contact with each other. Fill it with hot water and place it on to the heat source. As soon as the water starts to simmer, immerse your jars or terrines, making sure that you do not burn yourself. Your jars must be upright with the lids at the top. Prop them up, either against each other or using empty jars without lids. Top up the pressure cooker with more water: the jars and terrines must be completely submerged. Close the pressure cooker so that it is airtight. You can start to count the time indicated on the recipe as soon as the valve starts releasing steam. Keep to the specified time: this will ensure that your food is preserved safely. Once the time has elapsed, remove the pressure cooker from the heat source. Allow it to cool down naturally, without opening the lid. Do not remove the valve while the pressure cooker is cooling, and do not cool the sides of the pressure cooker with cold water: the jars or terrines are under pressure - a sudden change in temperature could cause them to open. Once the pressure cooker has cooled down, open it, take your jars and terrines out and store them in a cool, dry place, away from light. Stage 7: check and store away your preserves. Once the jars have cooled down completely, make sure that the vacuum inside is correct by undoing the clip. The lid must remain "stuck" to the jar and it should resist being pulled off. If the lid of the Le Parfait Super jars and terrines is not stuck on once the clip has been opened, this may be due to: overfilling or not filling sufficiently; incomplete thermal treatment: too little time and/or too low a temperature; the jar not being watertight: there could be a chip or stain on the rim or the lid; you have used a washer that is too old, worn, deteriorated, or one that is an unsuitable model or format. Restart thermal treatment, using another washer. For Le Parfait Familial Wiss terrines, proceed in the same way, unscrewing the lid. The cap must be stuck firmly to the terrine and should not pull off easily. If the cap is not stuck firmly to the terrine, restart thermal treatment using a new cap. To preserve your ingredients for several months, do not re-block the mechanism on Le Parfait Super jars or terrines. Store them in a cool, dry place, out of direct light. Stage 8: open your jars. Before opening the jars, ensure that there is still a vacuum, by doing the same as in Stage 7. If the lid of the Le Parfait Super jars or terrines does not remain firmly in place once the clip has been released, or if you have any doubt as to whether the contents have been correctly preserved, do not consume the contents, not even to taste them. Only adults should open the jars. Pull on the flap of the washer to let air into the Le Parfait Super jar or terrine. The lid will then come off. To open the jar or terrine more easily, it is recommended that you use the Le Parfait washer puller designed especially for this purpose.
