Ònix Clàssic 2024

Onix Clàssic Jove is a red wine from the Priorat produced by Vinicola del Priorat. It is a blend of Mazuelo (50%) and Grenache (50%). The grapes come from more than 300 plots of vines, the best are selected for the production of Onix Clàssic Jove. The varieties used, Mazuelo and Grenache, are highly adapted to the territory. The floors are licorella (slate) and the harvest is done manually in boxes of 15 kilos. In this way, the grains are not broken and fermented before they should. The ripening of the grapes is controlled with the use of phenolic ripening parameters. Once in the winery, the grapes undergo a slight skidding process and siphoning in deposits of stainless steel at a 2500 litre capacity. Onix Clàssic Jove then undergoes an alcoholic fermentation at a temperature of 25 degrees and then 20 days of maceration. Ultimately, the wine is fermented before it is ready to be marketed.
