Cardenal Mendoza is one of the few great brandies produced in a time honoured system, exaclty as it was more than 100 years ago. Made according to the unique traditions specific to Jerez de la Frontera; aged initially in special 250 litre American Oak casks it is then introduced to the system of criaderas y soleras which for Mendoza means 500 litre casks that have previously been used to age Pedro Ximenez and Oloroso sherries.
