HAND HARVESTED: harvesting is done by hand using the traditional system that has been passed down for generations. The salt workers enter the crystallization tanks and begin to break the crust with the help of squeeze bars. Once this manual crushing is finished, the salt workers use a special iron shovel to form small piles of salt and make the tanks look like a "chessboard". Then the salt is transported to the banks of the salt pans with wheelbarrows, creating ever larger prism-shaped piles. Once the first harvest is complete, preparations for the next mid-August and weather conditions allow for the third harvest will be made at the end of September.
