You can use sunflower, linseed, coconut, canola or avocado oil, but avoid olive oil as it can make the pan sticky. To increase the non-stick patina after cleaning and oiling, heat the pan over medium-high heat until it smokes, apply a little more oil using kitchen paper and leave the pan to cool before storing.
