The Ximenez-Spinola Winery is a winery founded in 1729 that only makes wines from the Pedro Ximénez variety.It is a family-owned winery, where the premium quality of its products overrides large volumes.Ximenez-Spinola Old Harvest is a sweet wine made from mixing two vintages from Pedro Ximénez.The solera 1918 is a wine with very high levels of dehydration. 1000 kg of fresh grapes are obtained with only 300 kg of raisins to produce 200 litres of wort. 1964 is a unique 100% Pedro Ximenez of oxidative aging.Ximenez-Spinola Old Harvest is a blend of the two wines with a higher percentage of 1964, which dominates the wine but with the edges of polished oak.A wonderful sweet wine, but surprisingly dry.
