MOUNTAIN PRODUCT: Parmigiano Reggiano DOP made from milk milked in mountain areas, matured 24/30 months, aluminised and vacuum-packed freshness-saving package. EXCELLENCE: born in pristine environments, amidst woods, streams and high-altitude pastures, Parmigiano Reggiano di Montagna is the fruit of great passion and long traditions, produced only from milk milked in that part of the Apennines that runs between Parma and Bologna. NATURAL AGEING: the maturing of our cheeses takes place in ancient structures with stone walls, built in the 19th century. This allows a cheese to mature in a natural balance of temperature and humidity, expelling excess humidity and residual whey from processing, enhancing its fragrance and aromas. PACKAGING: in order to maintain the product's aroma and typical characteristics, our products are packed in vacuum-packed freshness pouches with a triple layer of aluminium to prevent oxidation and thermal shock.
