Among all the Spanish denominations of origin, the DO Toro is the one that has undergone the fewest changes. This region, located to the southeast of Zamora, retains the same vines and varieties that made it so renowned during Roman times and the Middle Ages (when it even enjoyed royal privileges). However, there is always an exception to the rule, and new wines emerge aiming to "transgress" these norms, such as Flor de Vetus. Flor de Vetus is a single-varietal tempranillo (known as tinta de toro) that matures for approximately one year in French oak barrels. Specifically, these wines adhere to the most typical profile of this area, where tempranillo adapts effortlessly, while simultaneously seeking to write new chapters in the history of this denomination through profound and captivating wines.
